For the MFI Thanksgiving lunch I wanted to make these Chocolate-filled Sweet Potato Cupcakes from Better Homes and Gardens.
Then I realized I'd thrown away my cupcake pan (Note to self - buy a new cupcake pan before Blue's birthday party.), I did still have a mini cupcakes pan but the chocolate kiss insert wouldn't fit. Instead I poked in three or four chocolate chips.
Oh and this was my first time making chocolate frosting. Mmmmm. It was thick and yummy.
Recipe made 55 mini cupcakes.
I've never had sweet potato cupcakes. How did they taste?
